Who can hate meatballs? They are delicious, good for any occasion. They can be a meal or an aperetif. They can be enriched with any vegetable or spice you want….

Well, I ask once again, who can hate meatballs?

In this post I’ll give you the basic recipe. In the future I’ll teach you also some different kinds of typical meatballs, as the cod ones!

As you can see, I don’t put garlic in the mixture. They are easier to digest.

INGREDIENTS

  • 500 g minced meat (beef or mixed beef and pork)
  • 2 boiled potatoes
  • 50 g mortadella
  • 50 g parmesan cheese
  • 2 eggs
  • Breadcrumbs
  • 1 tablespoon chopped parsley
  • Salt
  • Pepper
  • Oil for frying

Making meatballs is very simple.

Mix the minced meat wit the 2 mashed potatoes, add  chopped mortadella, grated parmesan cheese, eggs, salt, pepper, parsley and breadcrumbs.

The mixture must be solid but not hard. It’s ok when it’s not too sticky.

Prepare some other breadcrumbs in a cup.

Give shape to the meatballs, roll them in breadcrumbs and fry them in a pan with oil for frying. Be careful because if you turn the fire too high, you’ll burn the meatballs outside and they’ll be rare inside.

When they are cooked, take them off the oil and put on some kitchen paper to take away the exceeding oil.

You can eat meatballs hot or even cold.

Sometimes I cook them in the oven with just a few drops of olive oil (180°C for 20 minutes). It’s a way of having healthier meatballs!

FRESH IDEA – if you like you can add just 2 scratches of lemon zest to the meatballs mixture. It will give a nice taste, especially if you eat them not very hot! 🙂

  1. I must admit that mortadella gives a peculiar taste to the mixture! In the US we don’t usually put it but I tried your recipes and it rocks! Well done!
