As I always tell you, in Italy culinary tradition is very important. Every area has its typical dishes and you won’t find the same recipes in all the Country.
This happens because we usually take simple farm ingredients, so we use the fresh ingredients our territory gives us, matching them in a simple way. Our ingredients are so good that if you mix too many of them, you would loose the peculiarity of each of them.
Simone Scipioni, the last winner of Masterchef Italy and one of my favourite ever, made an interview for a website. In this interview he properly explains these charachteristics of our culinary tradition.
